Aji Amarillo (C. baccatum) is considered the king of spices among Peruvian food. In Spanish, “Aji” means “chili pepper” and “Amarillo” means “yellow.” It is widely used dried, powdered, and even added fresh to a multitude of dishes. Very sweet and fruity, the Aji Amarillo also has some nice heat (in the 30,000 to 50,000 SHU range). Their thick, fleshy pods also make for great poppers. Aji Amarillo is a very popular pepper.
