The Cracked Jalapeño (C. annuum) pepper originates from the source – Jalapa (Xalapa), Mexico. While similar to other varieties of jalapeños, the Cracked version tends to have lots of cracking or “corking” on the skin. They are sweeter, crunchier and tend to be a bit hotter than standard jalapeños (estimated at 5,000 – 10,000 SHU). A must have for salsa, poppers and fresh dishes all summer long. The picture shows the progression of this jalapeño from green to red.
